How do you celebrate Hispanic Heritage month? My family likes to make traditional dishes that we don’t typically make on a weekly basis. It is a time for us to get together and enjoy good food with friends and family. A favorite dish that my whole family loves is Pollo Guisado (Stewed Chicken) but this year I decided to make it using the Instant Pot. The results were amazing! Fall off the bone chicken, flavorful potatoes and carrots with a delicious sauce.
I found the ingredients for this recipe and everything to entertain my family at BJ’s Wholesale Club. Did you know they carry many Latino ingredients like Goya? Instant Pot Pollo Guisado Recipe
Ingredients needed to make Pollo Guisado:
- 1 Whole Chicken (cut-up)
- 3 Potatoes (diced)
- 3 Carrots (diced)
- 1 Packet of Goya Sazon (to season the chicken)
- 1/2 cup Goya Tomato Sauce
- 2 TBS Goya Recaito
- 2 Cups Chicken Broth
- 1 TBS Garlic Paste
- 1 TSP Onion Powder
- 2 TBS Oil
- Salt and pepper, to taste
Directions:
1. (Optional – Cut up your chicken and marinate overnight with lemon juice and Sazon) Place the oil in the Instant Pot and press the sauté button. Give it time to get hot then place your seasoned chicken in the pot.
2. Add the garlic, Goya Recaito, onion powder, salt and pepper into the pan. Mix well.
3. Add the potatoes and carrots on top of the chicken. Add the Goya Tomato Sauce and 2 cups chicken broth.
4. Close the Instant Pot lid, select the chicken/stew option. It will cook for 25 minutes.
5. Once done, allow the pressure to release. Open the lid and mix well. Serve with a side of rice and enjoy!
This Pollo Guisado recipe is also perfect for a weekday when you are pressed for time. You can literally throw everything in the instant pot. You don’t have to do it a certain way. I’ve gotten the same results no matter how I do it. Typically, Puerto Rican style Pollo Guisado is done with potatoes and carrots (some people do add diced tomatoes) but my family has always done it this way. If you prefer, you can also do Carne Guisada which is a beef stew. If you want a certain cut, the butchers at BJ’s will cut it for you at no additional charge!
