How to Make No-Churn Coquito Ice Cream

It is National Ice Cream Day! We can’t celebrate without some ice cream, am I right? I have the perfect ice cream recipe to help you enjoy your day (and Summer as this will not be the last time you make it!). This Coquito (coconut) ice cream is sweet, creamy, and full of coconut goodness! Have an amazing ice cream bar party with all the fixins. I grew up in New York and spent many, many Summers in Puerto Rico where coconuts are a major staple. In the streets of the Bronx, I grew up eating limber (which is like an Icee) and Piragua (shaved ice) almost daily in the Summer. You would hear their carts strolling down the Boulevard. I always got the coconut or Passion Fruit flavor. There is just nothing more refreshing to me. During the holidays, we have a traditional Eggnog-like drink called Coquito. There are many ways to make it but my family always made it without eggs. It is an alcoholic beverage but this Coquito ice cream recipe is non-alcoholic so the kiddos can enjoy it too! Coquito Ice Cream Recipe

No-churn Coquito ice cream

Ingredients

1 Cup Heavy Whipping Cream

1/2 cup Condensed Milk

15 oz Cream of Coconut (such as this one)

1 Cup Coconut Milk

1/2 Teaspoon Cinnamon

(optional) Shredded coconut flakes

Directions:

1. Using a mixer or blender, add the 1 cup of heavy whipping cream. Mix on high until you start seeing small peaks in the cream.

2. Add the remaining ingredients into the mixer. Mix well.

3. Pour the mixture into a loaf pan. I used a 9 x 5-inch loaf pan. You can add the shredded coconut at this point if you prefer. Seal the pan with plastic wrap. You can pour it into anything that can have a nice air tight seal.

4. It is best to freeze overnight but if you are impatient, 4-6 hours in the freezer should do!
