limber1 Visiting Puerto Rico every summer was the highlight of my year. Going to the beautiful crystal clear beaches, the shopping, and most of all the food. I grew up eating the typical Puerto Rican cuisine and the desserts were also a must. My grandmother lives in a little town where everyone knew each other. Waking up to the sounds of cocka-doodle-doo was a norm. Hearing the pickup trucks in the morning selling fresh baked bread was an everyday occurrence. The ladies in the pueblo sold everything you could think of but my favorite was Limber. Limber came in so many different flavors and were sold for about 0.50 cents. My favorite flavor was Limber de Coco (like a Coconut Cream Pop). It was creamy and sweet yet so refreshing on a hot summer day. I’ve been thinking about Limber the last few weeks so I decided to try it with Lifeway Kefir Lowfat Cultured Milk Smoothie.

limber3Kefir Lifeways products were recently added to my radar when they were on sale in Winn Dixie. My kids love those yogurt smoothie drinks so I love the idea of having a 32 oz container that allows me to pour them a quick drink or even make a breakfast smoothie for them. Limber de Coco (Creamy Coconut Pops) Recipe:

1 cup Kefir Plain Smoothie (or Madagascar Vanilla)
1 Can Cream of Coconut
1 Can Coconut Milk
½ cup water
1 tsp of vanilla extract
1 tsp of cinnamon (plus extra for sprinkling on top)
Optional: Shredded coconut
Optional: Sugar
Popsicle mold or plastic cups

Mixed everything in the blender for about a minute. Until it is well mixed well. If you add shredded coconut it make stay foamy on top you can just mix it with a spoon before pouring into molds or cup. Once poured sprinkle some cinnamon on top then place in the freeze.

If you want it sweeter you can add sugar. I chose to omit the sugar since I wanted to keep it on the lighter side, plus I didn’t want my kids bouncing off the wall!
