The summer BBQ’s are in full swing, with 4th of July coming up this week I wanted to share a quick salsa recipe I made. There is something about salsa that makes me think of summer. My backyard is booming with ripe mangoes, grapes, and lemons. We have an abundance of mangoes this year, our second year that our tree has been producing. I boast and say we have the best mangoes in my family – sweet, juicy, and so fragrant.
The peaches and mango give the salsa a wonderful sweet taste but it is not overpowering as the green peppers, onions, and tomatoes give it an delicious balance. I used honey instead of sugar but you are more than welcome to use sugar instead. I didn’t want to make mine too sweet so the honey was perfect to me. I made a nice large batch and freezed the rest for future festivities. I am no chef so the recipe may need to be adjusted to your liking.
Mangoes and peaches are in season so take advantage of the sales going on in your grocery store. Enjoy!
