The memories I have of visiting Puerto Rico when I was a little girl are fondly remembered with my great grandmother in the kitchen cooking. Being Puerto Rican, there is nothing better to me! I love my rice, beans, and pernil – a typical Puerto Rican meal. The appetizers were always something I looked forward to especially Pastelillos. I just could not get enough of them. My family would make all types of Pastelillos – de carne, de queso, y de pizza. It was a snack I do for all occasions but I wanted to make them with a twist. Using El Yucateco Hot Sauce, I made a spicy, cheesy chicken Pastelillo.

Pastelillos are very similar to empanadas but the dough varies slightly as pastelillos are more flakier. Giving you a nice crunchy shell. I use pre-made dough to make my pastelillos, you can certainly make your own as there are a ton of recipes out there. I like simple easy recipes as I don’t have all day to be in the kitchen after working 8 hours!

Ingredients:

  • Package of pre-made pastry dough (got mine at Publix)
  • Shredded Chicken (make it in the crockpot)
  • El Yucateco hot suace
  • 1 tablespoon Sazon Ranchero liquid (food in the ethnic section)
  • 12 ozs of Cheese (used Velveeta block cheese)
  • About 1/2 cup tomato sauce
  • 1 small Green Bell Pepper
  • Garlic
  • Salt and pepper, to taste

In a pot combine all the ingredients, except the pastry dough. I made sure to coat the chicken with all the dry and wet seasonings. You can also throw all these ingredients in a crockpot. Since I wasn’t home to monitor the cheese I did mine in a pot.

After the chicken is well mixed, remove the chicken from the heat and grab your pastry dough. Grab a fork as you will need it to close the seams of the paselillos. Using a fork or spoon grab enough spicy cheesy chicken and place it in the center of the dough.

Using a fork press down on the edges to seal the dough half way around. Be sure to do both sides so that it doesn’t open when fried. Using hot oil fry each piece a few mins on each side. Serve hot and enjoy! They are full of flavor and so yummy!

Pastelillos are perfect for parties and events. They are quick to make and can be varied to fit anyone’s taste. I made mini pastelillos which is done by cutting one disc in half. Repeat the steps as the regular size pastelillos.
