Cheesy Vegetable Tostadas
INGREDIENTS
- 1 can (10 3/4 oz.) Campbell’s® Condensed Cheddar Cheese Soup
- ¼ cup milk
- 1 medium tomato, chopped (about 1 cup)
- 1 medium green pepper, chopped (about 3/4 cup)
- 2 medium green onion, sliced (about 1/4 cup)
- 1 jalapeño pepper, seeded and finely chopped (about 1 tablespoon) (optional)
- 6 (6 in.) flour tortilla
- ¾ cup Pace® Chunky Salsa – Mild
- ¾ cup sour cream (optional)
DIRECTIONS
1. Heat the oven to 400°F. Stir the soup, milk, tomato, green pepper, onions and jalapeño pepper, if desired, in a medium bowl.
2. Place the tortillas onto 2 large baking sheets. Spread about 1/3 cup soup mixture onto each tortilla to within 1/2-inch of the edge.
3. Bake for 10 minutes or until the tortillas are crisp. Cut the tostadas into wedges. Serve with the salsa and sour cream, if desired.

My son loves cheese and tortilla chips so I will try and make this for him. This looks like such a great meal for lunch on the weekends or dinner. I can never go wrong with Mexican style food.
I have two kids who love anything cheese- grilled cheese, mac n’ cheese, and everything else! I bet that they would like this, too. I like that I can customize it to make it a recipe for my family’s tastes.

I have been craving nachos and guac lately, seeing this now has me really hungry lol. I like how these look a lot softer than tortilla chips, don’t get me wrong the crunch is great. But I want to switch it up and I also really like the fact that these are homemade.

This looks like my kind of recipe – fast, healthy, and delicious! I think I might add some black beans or even serve refried beans and guacamole on the side. I used to make black bean tostadas a lot and love this variation with extra veggies. Yum! xx

Yup, this looks easy to prepare especially when all the ingredients are available and are all set. It’s a tasty and nutritious snack for the kids as well. I haven’t made tostadas before but it sure looks worthy to try.
Yum, I love recipes that are easy to prepare and not full of bad stuff. I basically grew up on tostadas but with corn tortillas. I really like that these are baked with flour tortillas because my daughters really don’t care for a tostada made with a corn tortilla. And I love the creative spin on it with the soup!
